This might be the start of the snow staying until April.
A children’s favourite. Cornflake chicken with horseradish whipped potato.
Or as the kids like to call it….. Cornflake chicky pooh pooh!
Crush cornflakes in bag. Press cornflakes on chicken (I’m a thigh man myself)
Put chicken in roaster season with BBQ salt. Cook on 220 for about a hour turn every 20 min to stop sticking to pan. Serve with whipped potatoes that have a good dollop of horseradish cream mixed in. Mmmmmmmmm
That time of year sweet pumpkin preserve.
12 cups of chopped pumpkin
6 cups of sugar
1 orange sliced
1 lemon sliced
A dash of allspice
Mix pumpkin, orange and lemon in big saucepan. Cover with sugar and leave overnight liquid will form.
Put in cloves and allspice bring to boil then simmer until pumpkin translucent. Put in jars…. Easy as!
Great on toast, fresh bread or even ice cream.
